This year, the handmade burger restaurant Five Guys Burger Fried Chicken is expanding the use of its wireless temperature sensor monitoring system by installing temperature sensors in its milkshake machines. The restaurant chain plans to install this system in all 1,300 restaurants in North America during the year. The ComplianceMate temperature tracking system is provided by the CM system and uses the active 900MHz sensor provided by Point Six Wireless to help ensure the safety of the raw material storage temperature and discard it when it exceeds the specified temperature value.

Founded in 1986, Five Guys is a national restaurant chain. Compared to some other fast food chains, the company does not use frozen meat in burgers. In fact, the company does not have a freezer. All materials are fresh, so Five Guys must monitor the refrigerator temperature.

Five Guys uses sensors to keep food raw materials fresh

Five Guys Food Safety and Quality Assurance VP Jim Gibson said that in the past, the company encountered some problems with cold storage temperatures. The temperature sometimes deviates from acceptable levels, but the restaurant manager cannot find out every time. The company and a third-party review agency set up a project where employees record the temperature every two hours and check the results.

Gibson said, but the paper system can easily be tampered with. Employees sometimes write the temperature without checking. In addition, the system often has human errors, and employees sometimes write the wrong temperature. In addition, restaurants must comply with the U.S. Food and Drug Administration's Hazard Analysis and Critical Control Point (HACCP) guidelines to ensure that the food is safe for consumption.

Five years ago, the company contacted the CM system to find an automatic, barrier-free solution using wireless temperature sensors to monitor the temperature of raw materials such as meat.

In 2011, the company began to install the ComplianceMate system in each new store, and plans to install the system in all stores this year. Each store stores raw materials in fresh-keeping cabinets. Each fresh-keeping cabinet is equipped with a Point Six sensor. A sensor is also installed in the food preparation area to ensure safe room temperature.

The sensor generates temperature information to the Point Six gateway every 5 minutes and transmits it to the CM system cloud server. According to CM system COO Thom Schmitt, the data transmission frequency can be configured by itself.

ComplianceMate food safety management software can capture, store and report data so that Five Guys can view the food temperature at any store and at any time. The software can also warn when the temperature is too high or too low.

In addition, the CM system also provides a Bluetooth temperature probe, which the staff can use with the installation tablet running the ComplianceMate application. The probe will transmit data to the tablet, and the tablet can then send out a reminder. Employees can also enter solutions on the tablet, such as discarding the affected food. This scheme adopts SAAS mode, users can pay monthly.

The ComplianceMate system reduces the labor cost of the restaurant, employees no longer need to use paper and pen to record temperature, and the accuracy of temperature data is also improved. This solution can also alert when the temperature is abnormal, effectively preventing the waste of raw materials discarded. Most importantly, it can ensure food safety.

Five Guys can also use historical data to track the condition of the cooler and replace it when it is abnormal.

Now, the restaurant uses wireless sensors in its milkshake machine. A Point Six sensor is installed in the hopper of each machine to ensure the safety of the raw material temperature.
