“Only companies that value quality can last a century.” When Changyu General Manager Zhou Hongjiang took over the first “Shandong Provincial Governor Quality Award” trophy from Shandong Provincial Governor Jiang Daming, an expert on the scene sighed. Recently, this selection, which marks the highest quality honor in Shandong Province, was announced. 10 companies including Changyu have undergone strict qualification review, social satisfaction survey and evaluation, expert review and social publicity, and finally won the “Shandong Provincial Governor Quality Award”.

“Made in Shandong” has always been well-known throughout the country. The 10 companies that won the first “Shandong Governor Quality Award” are all leading enterprises of Shandong manufacturing in various industries across the country, and Changyu Wine is undoubtedly a typical representative of them. From its establishment in the foothills of Yantai Mountain in 1892 to the top seven global wine companies in 2008 and becoming the largest wine company in China and even Asia, what is the secret of Changyu’s centuries-old success? According to General Manager Zhou Hongjiang, there is only one core secret, and that is “100 years of quality, brewing with heart”-the persistence of quality for more than 100 years: from grape planting, wine brewing to product delivery, all aspects of quality are Consistently strict requirements and the accumulation and innovation of brewing technology, each bottle of wine is brewed with heart.

250,000 acres of grape base: good wine starts with good grapes

As the saying goes, “Seven points for raw materials, three points for brewing”, good wine starts with good grapes. Dr. Li Jiming, Chief Engineer of Changyu, stated that “good grapes = good producing areas + advanced cultivation techniques + scientific planting management”, the three are indispensable.

At the beginning of its founding in 1892, Changyu attached great importance to the quality of wine grapes. In order to ensure the superior quality, Changyu imported more than 120 wine grape varieties such as Cabernet Sauvignon, Chardonnay, and Riesling from abroad. After many setbacks, they tried planting in Yantai success. The successful introduction of these grapes bid farewell to China’s history of lack of high-quality wine grapes, and can be called a historic leap for Chinese wine grapes.

After more than one hundred years of development, Changyu has completed the layout of grape bases in six high-quality production areas in the golden wine grape planting zone at 37-43 degrees north latitude: as of the end of July 2009, Changyu had 20.15 grape bases in the country. 10,000 mu, and the scale will reach 250,000 mu by the end of 2010. They will be distributed in six high-quality production areas in Yantai, Shandong, Shihezi, Xinjiang, Qingtongxia in Ningxia, Jingyang, Shaanxi, Huanren, Liaoning and Miyun, Beijing. For the wine industry, “250,000 mu” is undoubtedly an astonishing number, which means that Changyu has become the company with the most grape bases in the domestic wine industry.

Li Jiming said that in China, there is no shortage of good grape producing areas, but good grape bases. The grape base is different from the vineyards planted by scattered growers. It needs to adopt advanced cultivation technology and scientific planting management system to turn the vineyard into the first workshop for wine production. Therefore, the quality of grape base construction directly affects the quality of grape raw materials.

For more than 100 years, Changyu has accumulated rich experience in cultivation technology through continuous practice innovation and international exchanges and cooperation. Li Jiming said that we have conducted long-term research and variety adaptability experiments on the natural conditions of the six major producing areas, and planned out what kind of grapes each vineyard corresponds to, and what cultivation techniques should be used, so that the final wine will be unique. Origin characteristics and style.

So, how does the experience of these cultivation techniques reach the field of the vineyard? It is reported that Changyu has established a complete set of technical services and planting management system in its grape base: one is to hire 6 national experts to guide the company’s grape base development, variety selection, and the use of new technologies; the other is to establish its own technical management The team, the six bases have specialized grape planting technicians; the third is the cooperative-level technicians, experts hired by Changyu and Changyu’s own technicians pass advanced technology and information to the technical personnel of the cooperative, and the technical personnel of the cooperative Train growers and teach them to grow high-quality grape raw materials.

With its advanced raw material base management model, Changyu adopts professional and meticulous process management to ensure the high quality of grape raw materials. “Changyu is fully capable of producing wines comparable to internationally renowned production areas in the six major production areas that have already been deployed.” Li Jiming said.

A century of winemaking skills: good wines are inseparable from superb winemaking skills

There is a well-known saying in the European winemaking circle: Plant good grapes, and then experiment for 100 years to produce good wine. It can be seen that good wine requires unique natural conditions, and it is inseparable from the diligent exploration and inheritance of the winemaker.

In Bordeaux, France, the top wineries generally have a century or even hundreds of years of precipitation, while in China there is only one Changyu. For more than 100 years, from the first generation of Changyu winemaker Austro-Hungary Baron Baron Babao, the third generation of Italian winemaker Badistochi, to the ninth generation of French winemaker, the chief winemaker of Changyu Affiliate Beijing International Winery Hardy, every bottle of Changyu wine embodies the spirit of Changyu’s “Western French craftsmanship” (the door at the beginning of Changyu’s establishment is engraved with “Western French craftsmanship and fine wines”) quality inheritance and the hard work of several generations of winemakers .

In 2009, it became the new starting point of Changyu’s century-old winemaking history. In September last year, Changyu announced the establishment of an international winery alliance with seven top wineries, in addition to the original Yantai Changyu Castel Winery, Changyu Affiliate Beijing International Winery, Liaoning Huanren Golden Ice Valley Ice Wine Winery, In addition to the four major wineries of Changyu Kelly Chateau in New Zealand, the new alliances include Bordeaux Lasson Winery in France, Sandene Winery in Burgundy, France, and Changyu Pioneer Winery in Sicily, Italy. They all have a long history of hundreds or even hundreds of years. Among them, the two major French wineries are both manor territories with royal blood, and enjoy a high reputation in the old world countries. Winemakers from the seven top wineries gathered together to exchange and integrate different styles of winemaking concepts, bringing the century-old Changyu winemaking skills to a new level.

In addition to winemakers, strong technical force is also an indispensable guarantee for making high-quality wines. Changyu has been sparing no effort to invest in scientific and technological innovation. Its technology center has 4 national experts, 12 doctors and other senior titles, and 128 intermediate titles. The technology center has an average annual investment of 183 million yuan in scientific and technological development, and 85 new process research projects each year.

In recent years, Changyu has invested heavily in upgrading the brewing equipment: In 1998, Changyu built a 30,000-ton raw wine fermentation center in Yantai, which was fully automated and controlled, and its technology ranked at the world’s advanced level; in 2007, it built 30,000 tons per year. The production center of Jiebaina with production capacity and the automatic control of fixed pipeline system make the wine flavor blending more precise and balanced, which reflects the perfect combination of wine art brewing and scientific production; in 2007, hourly filling wine was introduced. The world’s most advanced bottling production line with 15,000 bottles; in September 2008, Changyu built a fermentation center in Ningxia with a fermentation and storage capacity of 20,000 tons. At the same time, Changyu introduced large-scale oak barrels from the famous French oak production area. Ensure the excellent flavor of the aged wine.

Based on the inheritance and innovation of a century of winemaking skills, Changyu also established in 2006 a set of strict comprehensive wine quality grading system that is in line with international standards and is the first in China: for vineyards, grape raw materials, brewing technology, oak barrel aging, blending and bottling. The storage of these six key links that have an impact on the formation of wine quality determines strict standards, selects layer by layer, and finally divides the product into four levels: master, collection, special and optimal, providing consumers with a clear Purchase standard.

Quality and safety traceability: give each bottle of wine an electronic “ID card”

In the wine counter of the supermarket, if you look carefully, you will find that the bottle label of Changyu’s high-end wine has an additional electronic label (RFID product traceability system). Consumers can identify the laser code on the label with their naked eyes, and query the authenticity of the product by entering a mobile phone message, which brings convenience to consumers in purchasing Changyu products.

It is reported that this electronic label is like affixed to each bottle of wine with a unique number “ID card”, which has entered the information of the bottle of wine from production to warehousing, logistics, and sales. It can realize real-time dynamic tracking and ensure product quality. Full backtracking and quick recall of problem products.

Li Jiming stated that Changyu has been actively responding to the requirements of the Food Safety Law since last year, and has taken the lead in introducing advanced RFID electronic tags from developed countries into the wine industry, thereby building a quality and safety system for Changyu’s products from vineyards to consumers. The system has been applied to the wine products of Chateau Changyu Affiliate and Chateau Changyu Castel, and will gradually be extended to Changyu Jiebaina and other products in the future.

In order to realize the whole-process monitoring of quality and safety, Changyu first carried out scientific and orderly management of the grape base: the management staff of Changyu grape base went deep into the fields and worked with 25,000 growers across the country to establish information files for each vineyard, including Geographical location, slope, sunny degree and other “terroir” conditions, planting varieties, field management, disease prevention, as well as information on the growers themselves, the number of grapes harvested, and sugar content; Changyu also formulated grapes in accordance with the requirements of the Food Safety Law Raw material quality and safety standards, all these quality and safety standards and measures are made into brochures and distributed to grape growers, and the growers are trained to solve the quality and safety problems of wine raw materials from the source. At the same time, Changyu also cooperated with the World Bank International Finance Corporation (IFC) to conduct in-depth research on the prevention and control of grape diseases and insect pests to improve the quality of grape raw materials.

Secondly, Changyu has also established a product quality and safety analysis and control system. In the past three years, Changyu has invested more than 10 million yuan to purchase advanced instruments and equipment such as atomic absorption, gas chromatography-mass spectrometry, liquid chromatography, automatic wine analyzer, etc., which are used for the detection of grape raw materials and wine quality and safety indicators. . As a grape and wine safety platform construction project of the National Development and Reform Commission and the Shandong Provincial Economic and Trade Commission, Changyu formulated the internal control standards for grape and wine quality and safety for the first time in the industry, and issued product quality and safety management measures accordingly, so as to ensure that every level of inspection is safe.
