RFID technology helps revolving sushi restaurants monitor food

For sushi restaurants, monitoring the quality of food, including seafood, is a very important part. To this end, the revolving sushi restaurant Blue C Sushi introduced RFID equipment from Intermec and business processing technology from Microsoft to track the flow of food in the store from the kitchen to the customer. The system includes Intermec RFID readers and antennas, Microsoft BizTalk RFID and Ebisu Live inventory management software from integrator Kikata.
There is a conveyor belt in the center of Blue C Sushi. All kinds of sushi are uploaded from the belt. You can choose your favorite sushi from your seat. Generally, sushi plates with different prices are of different colors, and finally the price is calculated based on the used plates and colors.

The introduction of RFID technology replaces the original tracking system that affixed bar codes under the dishes. The old system could only track the time when the dish was removed from the revolving belt. The new RFID system can provide more detailed business information, such as the type of food on the plate, how long the food has been placed on the carousel, which chef cooked and which food on the menu is in short supply.
The new system uses Intermec fixed RFID reader and special Intermec RFID antenna. The reader is placed on the chef’s cutting board, and the antenna is integrated into the revolving belt. Intermec and 3M jointly developed a label that not only can be firmly attached to the bottom of the dish, but also can withstand wear, including high-temperature cleaning environments and detergents.
“RFID technology allows us to better understand the needs of customers, such as which food is popular at a certain time or a certain day,” said James Allard, one of the creators of Blue C Sushi. “This helps us order recipes and order food. Greatly reduce waste”.
This Microsoft BizTalk RFID Kikata solution allows chefs to know in time which foods are on the carousel, which foods need to be prepared, and how much food is in stock. The system also automates and clarifies the payment process, which improves customer satisfaction.
