The establishment of the quality and safety traceability system not only meets the public traceability elements that consumers care about, but also provides strong data support for the regulatory authorities. It can also break the foreign trade barriers set by food quality traceability, and increase export opportunities and opportunities for Shengsi mussels. Improving international competitiveness plays an important role.
Shengsi mussel is a specialty of Shengsi County, Zhoushan City, Zhejiang Province. It is aquacultured with pure natural seawater, rich in nutrients and unique taste. It was awarded as a Chinese Geographical Indication Product in 2012. The mussel industry is a pillar industry in Shengsi County. With the development of the industry, it has gradually been favored by foreign consumers. However, Shengsi mussel farmers are small and scattered, the degree of informatization of mussel production and processing enterprises is not high, and the quality traceability system of mussels is not perfect. Most of them are exported to foreign middle and low-end consumer markets, and the added value of products is low. Establishing and improving Shengsi mussel quality traceability system, increasing export opportunities and reducing trade frictions have become the development trend of Shengsi mussel export industry.
In 2013, Shandong Radio Frequency Identification Application Engineering Technology Research Center Co., Ltd. (hereinafter referred to as Shandong Radio Frequency) developed the Shengsi mussel quality traceability system in accordance with the requirements of the Shengsi Entry-Exit Inspection and Quarantine Bureau, and was applied and promoted in enterprises.
System Development
Through full research on traceability theory and technology and field research on Shengsi mussel breeding, purchase, production, processing and sales links, Shandong Radio frequency designed the process of Shengsi mussel quality traceability system, as shown in Figure 1.

Establish a traceability system in accordance with the overall idea of ”reliable information, efficient operation, clear responsibilities, and easy operation”, and comprehensive utilizationRFIDTechnology, coding technology, network and database technology to collect, integrate, process and store the information of each link of mussel purchase, production, processing and sales, forming the whole process and comprehensive information of Shengsi exported mussels from raw material purchase to sale The internet.
Enterprise implementation
In September 2013, the development of the Shengsi mussel quality and safety traceability system was completed. With the cooperation of Shengsi County Inspection and Quarantine Bureau, the system training was implemented in Shengsi County Xiangyuan Aquatic Products Co., Ltd. (hereinafter referred to as Xiangyuan Aquatic Products). Through on-site implementation of the application and improvement of system functions, the quality traceability of exported mussel products has been successfully completed.
Farm management
Each fishing ground corresponds to a unique number in the system. After the numbering is completed, the sea area and fishing households are filed in the system, and all the farms in Shengsi County that have been registered and filed by the Xiangyuan Aquatic Products Quality Inspection Department and have the certificate of origin of the raw material safe area will be issued aquaculture acquisition IC card, and the fishing households will send it to them. Carry the IC card corresponding to the mussels when you ship the goods.
Acquisition management
This system is mainly for the management of acquisition. The mussels come from different fishermen and fishing sea areas. Even the same farmer is fishing in different sea areas. The quality of mussels in different sea areas is different. By reading the acquisition card Information entry is carried out in a way, and the information identified by the breeding purchase card is transferred to the information chain of the production and processing links. The specific management process is shown in Figure 2.

Processing management
There are many types of mussels in Shengsi, including half-shell mussels, full-shell mussels, dried mussels, single frozen meat and other products. The processing flow is not exactly the same, and the process is more complicated. Take the processing of single frozen meat products as an example, as shown in Figure 3.

In order to make the system universal within the enterprise, the specific processing link can be divided into two parts: semi-finished product processing and finished product processing.
During the processing of semi-finished products, relevant processing information shall be recorded, and the turnover boxes or cartons in which the semi-finished products are stored shall be marked. There are two types of marking: revolving use and one-time use markings.
For finished product processing, use a bar code printer to print traceability labels in batches in advance, and then paste the traceability labels on the designated location of the finished product packaging box. The label information includes product name, two-dimensional code (coding rule: product GTIN code + sequence number), etc. Define it according to the actual situation of the enterprise (Figure 4). The operator completes the whole process by scanning the QR code on the finished carton through a handheld terminal.

Sales management
Finished product processing is divided into order-to-order production and non-order production. For order-to-order production, the goal is clear when formulating the production plan, which can reduce the process of warehousing, while reducing the number of times to scan labels and saving operation time; after non-order production is completed, the product enters the finished product warehouse refrigeration. When the sales order arrives, complete the outbound code scanning and sales process through the handheld terminal.

Implementation benefits
In accordance with the construction requirements of “source traceability, whereabouts can be verified, and responsibility accountable”, the system has realized the quality traceability of exported mussel products throughout the entire supply chain of raw material purchase, production, processing, and sales.
After consumers have purchased the product, they can make inquiries in the following ways:
a. Consumers on the company website log on to the company’s official website and enter the traceability bar code in the traceability section to make related queries;
b. Third-party public service platform consumers log on to the third-party public traceability service platform website and enter the traceability code to make related queries.
c. The food safety query terminal is installed in the product sales terminal storefront, and the food safety traceability query machine can be traced in detail to the basic information of the product, the information of the processing link and the inspection report;
d. Scanning the QR code with mobile phones With the popularity of smart phones, more and more consumers have smart phones and install related tools to scan barcodes, and scan the QR code on the package of a single product for relevant information through the corresponding software. Simple query.
e. Send SMS to SMS platform If consumers do not have a smart phone, they can send the traceability code to the SMS platform to obtain the traceability information of the purchased product.
f. Telephone enquiry. Companies set up product enquiry telephones, and consumers can inquire about product-related information by dialing the telephone.
After using the mussel quality and safety traceability system, the company can conduct standardized management of farmers to achieve the purpose of controlling the quality of raw materials. The mussel quality and safety traceability system connects all links of acquisition, production, inspection and sales. When quality problems occur, companies can quickly identify the source and extent of the problem products through the traceability system, carry out limited recalls, and reduce unnecessary losses. So as to improve the information management level of production enterprises, enhance the brand image of products, and increase consumers’ recognition of product quality.
